Let Food Be Thy Medicine

In its place, I have no problem with modern medicine.  When my kids have decided to face plant on the pavement or slam their hands in the door we have gone to the ER.  We are not anti-doctor.  But, we are very pro-health.  If there is a safe, effective, natural and affordable remedy in my own house (or with a quick trip to the health food store or order from Mountain Rose) we do that first.  There are so many things you can treat from your own provision room.  Did you know that hiding in your pantry, refrigerator and garden there is wealth of healing power? Canning Beans

I must confess anytime someone mentions pressure cookers it gives me the heebie geebies!  I grew up with my mom telling me all these horror stories of melting skin after pressure cookers exploded in kitchens.  Yikes!  Who wants to have anything to do with something that can explode in your kitchen?!  It took me well into my adult life to gather up my nerve to purchase one of these beasts and I only did it out of professional necessity for my personal chef business.  The chef association, where I was a member, coordinated a great deal with a German manufacturer and promised me these were the professional tool that would change my service day.  Boy did it!  I was able to cut my service time because I could cook in a fraction of the time.  All this being said, I still had never pressured canned anything and even though I’m a little more comfortable with using my cooker the thought of loading the thing with bean-filled glass sent me right back to cowering in the corner! Dinner’s In The Freezer

I’ve always thought it was a great idea to make dinners for the freezer.  But, really, I have only done that for two reasons: 1) So that I have a few meals for my post-partum lying-in.  Or 2) When I will be out of town for a few days or weeks and I don’t want Gana and the kids to live off fast food and cold cereal.

I have seven kids.  The next time someone dares to call me Super Woman I will refer them to these pictures.  It’s a wonder looking at these pictures that I manage to feed my family at all.  So disorganized.
